Okay, I realize that this needs a better name than “Super yummy GF chicken” and I’m open for suggestions, although it really is super yummy as well as being gluten-free. Yay!!
Here’s what we did:
1 cup corn meal
1/2 cup gluten-free baking flour mix
1/3 bottle of Italian dressing
1/2 – 1 cup milk
4 T grated Parmesan cheese
1 bag of chicken breast (can be cut)
Dash of black pepper
Heat oven to 400. Combine dry ingredients in bowl, stir. Add wet ingredients. The milk will vary but you want to be sure that there’s enough liquid to make a nice batter.
Put the chicken – a few pieces at a time – into the batter, ensuring that each piece is completely covered. Place coated chicken on a pan. Bake 40 to 45 minutes.
I have no idea how many servings this would be but it fed three kids and three adults, with no leftovers.
We also sliced up some tomatoes and zucchinis, placed them in a bowl of Ken’s Greek dressing for 15-20 minutes before cooking them on the stove.
